Fish
shredded cabbage
seeds
red onion
salt

coriander
cumin
olive oil
spot prawn mayo
• Lightly oil one side of each tortilla
• Thinly shred cabbage and mix with pumpkin seeds, spicy spot prawn mayo and one quarter of the spice mix
• Oil the fish (tuna loin is yummy) and season with remaining spice mix
• Sear and slice fish
• Grill tortillas
• Slice/shred fish in one quarter inch slices and place three slices on the middle of each tortilla
• Add one quarter cup of cabbage mixture, and one heaping table spoon of onions on top of fish
Ingredients- for Spot Prawn Mayo
One half pound spot prawn (flash sear on high heat with canola oil, then add all ingredients except mayo to deglaze)
One half ounce canola oil
1 and a half ounces sriracha
1 ounce lime juice
1 ounce mirin
1 teaspoon Sea salt and pepper mix
2 cups mayonnaise
• Thoroughly food process all ingredients except the mayo then push through fine sieve into mayo and vigorously whip mixture.
